This Wednesday, 23 of January, the new gastronomic season of the restaurant of Quique Dacosta in Dénia. A new menu that, under the name Self-portraits, takes a turn in the main argument of his kitchen, in which he expresses a liberation of what has been built up to the moment, with an intense look provoking imagination and fantasy, but maintaining without possible negotiation the value of the product and the complicity with his territory.
The three-star chef michelín ensures that "Self-portraits is gesture, an attitude and goodbye to monotony, to the monopoly that we ourselves have created, and that needs our imagination now more than ever to continue evolving".
Dacosta has confessed that "Sometimes I hate my own creations. I always live that intimate idea of limit, and that's why I think it's time to explore other paths.".
Given the expectation that the beginning of a new season creates each year, Quique Dacosta explained that "Every year, when we open the restaurant the creative process is already done, however this year is not like that. Right now we have the contextualized idea of what is Self-portraits, but today we continue to feed the leprechaun so that the moment of generation is generated fantasy and surprise ".
