The cuisine of Dénia and the Marina Alta will be the first to register in the Corpus of the culinary heritage of the Valencian Community

Yesterday, the Autonomous Secretary of Tourism and the Center de Gastronomia del Mediterrani, together with the mayor of Dénia, Vicent Grimalt, and the UNESCO Office of Innovation and the Creativitat Ciutat Creativa presented what will be the culinary heritage Corpus of the Valencian Community.

This document, which is expected to form part of the Diccionari Gastronòmic Valencià, will collect the culinary tradition of the Valencians to perpetuate it and make it known. For this, from next September they will begin the field work, choosing Dénia and the Marina Alta as the ideal place to start the project.

These works will consist of a collection of typical dishes through interviews with cooks, producers, institutions ... In short, professionals and specialists in history, cuisine and nutrition.

"It will not be just another recipe book, but the work that determines what our dishes are, and what products and tricks we spend", announced Grimalt, although he bets that this is not a gallery of closed and stagnant dishes, but that, in addition to being a place where you can find recipes at risk of disappearing, you can encourage their preparation and reinvent the kitchen.

It will serve as an instrument to build and innovate, as well as to demand administrations resources to protect the elements from the risk of disappearing, according to the representative of the Office of Innovation and Creativity, Floren Terrades.

And, as we anticipated, the project will start in the Marina Alta due to its rich cultural heritage and to use Dénia's role in UNESCO as a Creative City of Gastronomy. A privileged place, as they underlined, to make known what is the role of Valencian gastronomy in the world and thus export our culture.
