This January 23, Dénia will host the presentation of the book The tractat de l'escaldat del raïm and the pansa de lleixiu: agriculture, history and culture by the author, Josep Marqués Costa.
The book deals in depth with the traditional process of blanching grapes and the production of raisins using lye. This book inaugurates a new line of research, placing it in the context of a shared ancestral tradition that has endured for centuries in various regions of the Mediterranean and the Middle East. It also shows how this practice has been adapted and expanded to other parts of the world.
The study refutes the stereotype that attributed the exclusivity of this technique to the region of the Marina Alta, an idea that some authors had wrongly held. The research shows that grape blanching is a technique of great historical relevance that has survived in specific micro-regions of the planet where this pre-treatment favoured the drying process. For the first time, comparisons are made with other parallel ethnographic practices, offering a more global and integrated vision of this tradition.
