Ferran Giró will bet in the workshop to work with a value "very traditional" like coca escaldà, fused with techniques from outside the Mediterranean, making a semi-seasoning of a discarded fish and a ceviche salad. Ferran Giró supports proximity consumption and wants to show the public that there is much more product, and at a good price, beyond tuna or salmon.
