Two university students from Parma dedicate their master's thesis to the gastronomic resources of Dénia

Chiara Laura Ferrari and Stefania Gigante, graduates of the University of Parma, are carrying out their master's thesis around issues related to gastronomy and the food system of Dénia and the Marina Alta. The two Italian students, who have been in Dénia since mid-summer, were received this week by the mayor, Vicent Grimalt, who was interested in their stay in Dénia and the research they are doing.

Both take a COMET master's degree (Culture, Organization and Marketing of Territorial Enogastronomy) offered by the University of Parma, the only one in Italy that deals with research on quality territorial gastronomy. The master is sponsored by Parma Creative City of Gastronomy, link that makes possible the realization of theses in other cities of the UNESCO network.

During the three months of their stay in Dénia, the two students have been collaborating with the Office of Innovation and Creativity, from where they have been advised and provided with the information and contacts they needed to give content to their research. . Likewise, they have collaborated in the activities organized within the framework of the Creative City of Gastronomy, such as the campaign Menja't the Navy that has been developed in the last few months at the Mercat de Dénia, or the D * na gastronomic festival, where they acted as volunteers on the stands of the creative cities of UNESCO.

Chiara and Stefania also had the opportunity to get to know the Marina Alta region and its agri-food resources. They have visited wineries and fields of vines, the market and the fish market of Dénia, the Mercat del Riurau de Jesús Pobre or the Marjal de Pego. They have also attended and participated in events and meetings related to agri-food and tourism activities, such as the festival Dolia of Teulada, the presentation of the catalog of traditional agricultural varieties or the actions of the Commisió del Blat for the reintroduction of the wheat crop in the region.
