Dénia and Cochabamba (Bolivia) strengthen relations in the Unesco Creative Cities network

Dénia and Cochabamba (Bolivia) have signed a collaboration agreement to strengthen their relationships in the Unesco Creative Cities network, of which both are part. The document has been signed within the framework of the D * na Restaurant festival, to which the Bolivian city has joined with its presence and participation. Cochabamba is the third most populated city in Bolivia and has been part of the Creative Cities of Gastronomy since 2017.

On behalf of the mayor of Cochabamba, Manfred Reyes Vila, the president of the city's Association of Restaurants and Related Branches Entrepreneurs, Tony Salazar, and the cook Claudia Marcela Sauma, former president of the Bolivian Chefs Association, were in Dénia. The mayor of Dénia, Vicent Grimalt, stamped its signature on the agreement, which includes exchanges of cultural, business and training experiences in the hospitality and gastronomy field, and the organization of activities of mutual interest.

The Cochabamba delegation also held a job interview with AEHTMA in which its president, Cristina Sellés, and the manager, Reme Cerdá. Prior to the institutional events, Claudia Marcela Sauma was the protagonist of one of the culinary demonstrations of the D * na Restaurant on the stage of the Plaça del Consell, in which she used traditional techniques of the cuisine of her country. In his meeting with the festival curator, Quique Dacosta, the Bolivian representation gave him a “batán”, an ancient stone grinding instrument that was already used by the pre-Latin indigenous peoples and that still has a daily use in traditional Bolivian cuisine.
