This will be the future of Dénia's tourism model: sustainable gastronomy and Mediterranean diet

Economic, social and political agents of Dénia yesterday held an extraordinary session of debate to evaluate and validate the final version of the Dénia Destination Tourism Sustainability Plan "Gastronomy: recipe for a sustainable future / #TastingLife", for its presentation to the Extraordinary call for 2022 of the Destination Tourism Sustainability Plans Program for local entities, financed entirely by Next Generation European funds. The budget to develop the actions contemplated in the Tourism Sustainability Plan in Dénia Destination amounts to 4.881.832 euros.

The PSTD Dénia "Gastronomy: Recipe for a Sustainable Future / #TastingLife" will allow to place sustainable gastronomy and the Mediterranean diet as axes of the evolution of the city's tourism model. The general objective of the plan is to strengthen Dénia's position as a leading city in sustainable gastronomy, promote the renewal of the tourism model, based on the commitment to the Sustainable Development Goals (SDG) and the Mediterranean diet (declared Intangible Heritage of the Humanity in 2010) and deploy the UNESCO Creative City of Gastronomy project and the strategy "Gastronomy: Recipe for a Sustainable Future / #TastingLife", a roadmap to build a sustainable future in which a diversified economy is guaranteed. on an attractive territory with its own personality.

The Destination Tourism Sustainability Plan will strengthen the tourist role of Dénia, turning the city into a reference in sustainable gastronomy. A leadership based on values ​​such as respect for culture and tradition, healthy living, authenticity, sustainability, creativity, innovation, decent work, solidarity and the value ecosystem of gastronomy in the Marina Alta.

Therefore, the starting point of the current cuisine of the region seems clear, grow from tradition to continue being different, realizing the great opportunity that this means. Also noteworthy is the role of associations and cooking schools that have helped to professionalize the sector by creating a professional and quality environment, as in the case of the CdT, the IES Maria Ibars, Aehtma and other sectoral associations.

Axes of action of the Tourism Sustainability Plan in Dénia Destination

1. Green and sustainable transition. This axis includes a key project for the green strategy of the city and the recovery of the natural environment, the urban metabolism, and the connection of the city with the food system of the Marina Alta: the environmental recovery of the Bosc de Diana, kilometer 0 of the gastronomy of Dénia. It is also proposed to favor the ecological transition of the gastronomic tourism sector, with measures to adapt to climate change and promote the circular economy and the improvement of human capital. Likewise, the Xarxa Local Food Ecosystem project is contemplated, which represents the enhancement of the territory from the land and the sea to the whole of the environmental and human landscape

2. Improved energy efficiency. The aim is to promote a set of key projects to guarantee sustainable tourist mobility in the destination, with projects for the humanization and valorization of the urban metabolism, such as the creation of decarbonized trails to connect the gastronomic resources of Dénia and the Marina Alta and the promotion of the energy efficiency in the different elements that make up the gastronomy value chain in the city.

3. Digital transition. This axis includes the creation of a digital platform for the professional gastronomy community of Dénia and the Marina Alta, which will allow the creation of the gastronomic ecosystem community of the territory and the availability of knowledge, management and marketing tools aligned with the guidelines of the Tourist Destinations. Intelligent, which will contribute to the dissemination of a new story of the city.

4. Competitiveness. Finally, the PSTD intends to promote a project that will lay the foundations for the evolution of Dénia's tourism and gastronomic model: the Mediterranean Gastronomy Center and the future campus that will house the Degree in Gastronomic Sciences and Culinary Arts.

Participation of local agents

Different sources of information and participation instruments have been used to prepare the Tourism Sustainability Plan in Destination Dénia. On the one hand, the preparation of the Sustainable Urban Development Strategy, which was structured in a process of online participation, information sessions and workshops. Likewise, within the framework of the Sustainable Urban Mobility Plan, a process of citizen participation was promoted for the preparation of the Bicycle Strategy.

Secondly, the Creative City of Gastronomy project. The City Council of Dénia, within the framework of the D * na Forum, and in collaboration with Turisme Comunitat Valenciana, promoted a process of debate and reflection in discussion groups on the future of gastronomic tourism in the Marina Alta.

Finally, the Dénia Tourist Focus has been launched, a participation process in which the economic, social and political agents of Dénia debate in collaborative sessions the bases to guide an optimal tourism model for the city. It was this forum that held an extraordinary meeting yesterday in which the PSTD Dénia presented for the extraordinary call for aid for 2022 was given the go-ahead.
